Bianco (white) is represented by imported mozzarella di bufala, a cheese often referred to as “white gold.” Made from the milk of Italian Mediterranean buffalo, the result is an intensely rich and creamy cheese.
Rosso (red) is expressed by heirloom tomatoes from the farmers market. Heirlooms are grown for flavor, not appearance, and are pollinated by birds, insects, wind and hands rather than by scientific intervention. Farmers keep the seeds from the best tomatoes of the previous season and use them the next season... meaning a farm's heirloom tomatoes become more flavorful with each passing year.
